Not Nice Spice
The woes of motherhood are never stronger than when you realize you need to go through an elimination diet. Only to discover your babe isn’t struggling with just dairy, but the protein complex… which means you’re saying bah-bye to dairy, gluten, oats, beef, sweet potatoes, avocados, fish (some), and pea/bean (some). Oh, and don’t forget the eggs for breakfast! Nearly SEVEN months in and it’s not nearly as bad as I thought it would be. After a little dodge, duck, dip, dive and, well, more dodging I’ve managed to create meals, bake and snack without major catastrophe.
But minor ones always rise to the top—such as when Trader Joe’s no longer stocks their coconut milk creamer! Why, God, why? Honestly, besides the ridiculous price tag of most store bought dairy-free creamers, I really just don’t like the taste. So I went to the drawing board with the first attempt using coconut cream, but quickly realized that once it’s in the fridge it’s less than manageable. I took the fat content down a notch and tried coconut milk, but I couldn’t stomach the intense coconut flavor. Thankfully, heaven sent in Trader Joe’s Simply Almond Beverage--just almonds and water!!! With a little maple syrup the flavor leaves a hint of coconut, which can be minute when you add cinnamon, vanilla extract, nutmeg, ginger, or any other combination of spices. I’ve just finished a jar using the recipe’s base three ingredients, and the next batch I plan on adding Trader Joe’s Pumpkin Spice blend. Sending out a little prayer that it’s remotely close to a PSL (which sadly is not dairy-free).
