Not Nice Spice
We tend to gravitate towards the same items at the grocery store. Sadly, there isn't much to choose from in terms of granola bars for the kids. I always like to have easy to-go options in case we're held up with errands or dashing to a playdate. They always want them when we're at home, but I like to change things up a little so adding granola to yogurt is a fab option. The kids love loads of fruit, which is a blessing (so healthy!) and a curse (so much poo!). Healthy starches in their diet help to provide a nice balance. Plus it's so much fun to bake with a toddler in the "helper" stage. I don't have much to do but sit back and taste test! That's definitely a pregnancy win in my book. First, we made Healthy Pumpkin Granola from Minimalist Baker Recipes. It's a new granola recipe we tried since I had pumpkin puree, pecans, and pumpkin seeds on hand. We added 2-3 tablespoons of Trader Joe's pumpkin spice and doubled the pumpkin seeds (2/3 cup). So DELICIOUS! Chickadee loved it so much she ate a bunch before I even cooked it. Definitely tagging this to make again! Next up: Healthy Chocolate Chip PB Granola Bars! Anyone else go through loads of peanut butter?! Seriously our Achilles heal in this house. I made these from Amy's Healthy Baking because they're perfect for Chickadee and Little Dude to snack on at home. Plenty of littles have peanut allergies and I'm not about to add to any mamas' stress and take these out and about. I buy the allergy friendly granola bars, that cost an absurd amount, for on the road but at home we can play low-key. These granola bars have a little bit of crispy cereal and yogurt, too. I was shocked at how good they tasted!!! We didn't have any chocolate chips on hand, so I smashed a few squares of baking chocolate and sprinkled on top- super easy!
