Not Nice Spice
When I decided we needed a salad overhaul this summer I started with the Memphis style coleslaw from Bare Feet in the Kitchen. It was so simple and delicious! I swap out traditional mayo for Vegenaise Soy Free mayo, since Little Dude can't have egg, and if a recipe calls for sour cream I use SO Delicious dairy free yogurt, since the Little Old Man has such a fickle tummy. Since swapping the ingredients out was such a hit I adapted recipes for a cilantro lime slaw, a cranberry pecan coleslaw and a carrot salad. The only one I really changed up was Dash of Sanity's cilantro recipe. I added grilled corn, diced red peppers, diced tomatoes and black olives. Stud grilled taco seasoned chicken and it was beyond incredible! For A Southern's Soul's cranberry pecan coleslaw I usually change out the pecans for walnuts because we always have that on hand, and it's worked out great. The one salad that surprised Stud and I, AND the kids loved the most, was The Country Cook's carrot raisin salad. Truth be told the pineapple makes it so addicting. I've tried canned and fresh pineapple and without a doubt always use fresh- you can't beat it!
We're going to keep savoring these until the last little bit of summer!
